Yalovo Winery was established in 2014 in the building of the former school in the village of Yalovo, located at the foot of the Stara Planina Mountains south of Veliko Tarnovo.
Two friends, the visionary Anton Tanev and Dimitar Dimov - the winery's oenologist, embarked on this not-so-easy adventure, driven by their desire to create wines that express the beauty of the region and their shared vision for winemaking.
The wines of Yalovo Winery have the ambition to recall traditions and the past, combining pure techniques and aesthetics in a craft production!
For their wines, they select plots of winegrowers with whom they work closely and monitor the best development of the fruit so that it conveys its character in the wine. At the same time, they began to create their own vineyards.
Their goals are, in addition to raw materials, to revive traditional local varieties and old growing techniques, as well as to preserve biodiversity in the region.
The first plot has already been planted with Dimyat, Pamid, Gamza, Rubin and Chardonnay.
They are also preparing other plots, for which, in addition to these varieties, they will try to find the forgotten Kokorko, Vinenka, Varnenski Mavrud.
Their plantings are in narrow rows (1.7 m) at a density of 653 vines per decare, which brings us closer to the old traditional viticulture.
